Effortless Cranberry Hand Pie Recipe: A Sweet Solution
The inspiration for these irresistible cranberry hand pies stemmed from a truly heartwarming cause. After the holiday season, a friend’s church organized a fundraiser to support a mission trip to Mexicali. The goal was twofold: to provide backpacks filled with essential school supplies to children in need and to offer meals to the homeless. It was an admirable initiative, and a silent auction was a key part of the event. When I was asked to contribute, I knew I wanted to offer something special – a baked good that was not only delicious but also practical for the occasion.
My criteria were clear: the dessert needed to be easily portable, able to withstand a couple of days without refrigeration, and capable of being individually packaged with a charming presentation. Hand pies immediately sprang to mind as the perfect candidate. I drew inspiration from several of my favorite recipes, combining elements that I knew would work beautifully together. I started with my trusty homemade pie crust, the foundation for many successful pastries. For the shape and concept, I referenced my popular blueberry hand pies. The final touch of sweetness and tang came from the delightful glaze I typically use for my cranberry orange pound cake. And, of course, the star of the show was a generous amount of leftover cranberry sauce. With these components in hand, the Cranberry Hand Pies were born, and they were an instant success.
The fundraiser proved to be a resounding triumph, with 157 tickets sold and an impressive $2,380 raised for a truly worthy cause. It was incredibly gratifying to see that not a single bit of delicious cranberry sauce went to waste. Furthermore, it resulted in this fantastic new pie recipe, which I am thrilled to share with all of you. It’s a win-win situation: supporting a community, eliminating food waste, and creating a new family favorite. Success, indeed!
Why Choose Hand Pies?
Hand pies offer a multitude of advantages that make them a superior choice for desserts, snacks, or even a delightful breakfast treat. Their individual serving size is arguably their greatest appeal. No need for plates, forks, or complicated slicing; each pie is a self-contained portion of flaky, fruit-filled goodness. This makes them incredibly convenient for parties, potlucks, lunchboxes, or simply enjoying on the go. They’re also far less messy than traditional pies, reducing clean-up and making them a stress-free option for any occasion.
Beyond convenience, hand pies provide a wonderful texture experience. The higher crust-to-filling ratio ensures a perfect balance of crisp, buttery pastry and luscious, flavorful fruit. This makes every bite incredibly satisfying. Their rustic charm and ease of personalization—you can vary fillings, glazes, or toppings—add to their allure, proving that sometimes, the best things come in small packages.

Essential Ingredients for Cranberry Hand Pies
These cranberry hand pies provide the perfect culinary destination for that final, precious bit of cranberry sauce lingering in your refrigerator after a holiday dinner. They transform what might otherwise be forgotten into a star-studded dessert. Gathering the right ingredients is the first step to creating these delectable treats. While the recipe is quite forgiving, using quality ingredients will undoubtedly elevate the flavor and texture of your hand pies. Below is a comprehensive list of what you’ll need to create these individual masterpieces, with helpful notes for each component.
- Cranberry Sauce: You’ll need about 1/2 cup of cranberry sauce. This is the heart of your filling. While I highly recommend using your homemade cranberry sauce for its superior flavor and texture, a good quality canned cranberry sauce (either whole berry or jellied, mashed well) will work perfectly fine. If your sauce is particularly runny, you might want to gently simmer it over low heat for a few minutes to reduce and thicken it slightly before using, ensuring a firm filling.
- Pie Crusts: You’ll need two 9-inch pie crusts. For the best homemade flavor and texture, I suggest making your own homemade pie crusts. However, for convenience, a 14-ounce box of refrigerated pie crusts (like Pillsbury or store-brand versions) is an excellent time-saving alternative that yields great results. Ensure your store-bought crusts are at a workable room temperature but still cool enough to handle easily without becoming sticky.
- Egg + Milk (for Egg Wash): A single large egg mixed with a splash of milk creates the perfect egg wash. This mixture is crucial for two reasons: it helps seal the edges of your hand pies, preventing the filling from leaking out during baking, and it gives the crust a beautiful golden-brown sheen and crispy texture.
- For the Glaze: The vibrant, tangy-sweet glaze adds a final flourish to these hand pies. It’s a simple yet effective combination of:
- Powdered Sugar: The base of the glaze, providing sweetness and body.
- Fresh Orange Juice: Adds a bright, zesty tang that complements the cranberry beautifully and provides the necessary liquid for the glaze.
- Orange Zest: A touch of finely grated orange zest intensifies the citrus aroma and flavor, making the glaze truly pop.
Having all your ingredients measured and ready before you begin will make the assembly process smooth and enjoyable. With these simple components, you’re well on your way to creating a batch of delicious cranberry hand pies.

Tips for Hand Pie Perfection: Achieving Flaky, Flavorful Results
Crafting the perfect hand pie involves a few key techniques that can make all the difference between a good pie and an exceptional one. Paying attention to these details will ensure your cranberry hand pies are beautifully golden, delightfully flaky, and bursting with flavorful filling, without any messy leaks or soggy crusts. Here are some essential tips to guide you to success:
- Efficiently Re-roll Dough Scraps: After cutting out your initial pie crust circles, you’ll inevitably have dough scraps. Don’t let these go to waste! Gently gather the scraps, press them together lightly to form a cohesive ball, and then carefully re-roll them on a lightly floured surface. Work quickly to prevent the dough from becoming too warm, which can make it tough. If there’s enough dough, you can cut out additional circles to form one or two more hand pies. This minimizes waste and maximizes your delicious yield.
- Avoid Overfilling at All Costs: This is a critical step to prevent leaks and ensure a tidy pie. It might be tempting to pile in as much cranberry sauce as possible, but resist the urge. A heaping tablespoon per hand pie is usually the sweet spot. Too much filling will make it difficult to seal the edges securely, leading to the filling bubbling out during baking and potentially creating a sticky mess on your baking sheet. It can also make the bottom crust soggy.
- Securely Crimp the Edges: A tight seal is paramount for containing the cranberry filling. After placing the top crust over the filling, gently press the edges together with your fingers to adhere them. Then, use the tines of a fork to press firmly around the entire perimeter of each pie. This not only creates a decorative pattern but, more importantly, ensures a strong seal that prevents any precious filling from leaking out during the baking process. A well-crimped edge is your best defense against a burst pie.
- Vent the Tops for Steam Release: Before baking, it’s essential to cut two small crisscross vents in the top of each hand pie. These small openings are vital for allowing steam to escape from the cooking filling. Without proper venting, the trapped steam can cause the pies to puff up unevenly, potentially burst, or worst of all, make the top crust soggy while the filling becomes overly soupy. The vents ensure a crispy, perfectly baked crust and a beautifully set filling.
- Monitor Baking Time and Color: Oven temperatures can vary, so keep a close eye on your hand pies as they bake. They should turn a beautiful golden brown color, indicating that the crust is fully cooked and flaky. If you notice the edges browning too quickly, you can loosely tent the pies with aluminum foil.
- Cool Before Glazing: While it’s tempting to glaze warm pies, resist! Allow the pies to cool completely before applying the orange glaze. Applying glaze to hot pies will cause it to melt and run off, creating a sticky mess rather than a beautiful, set finish. Cooling also allows the internal filling to firm up properly.
By following these tips, you’ll be well on your way to creating a batch of cranberry hand pies that are as impressive to look at as they are delightful to eat.

Proper Storage for Cranberry Hand Pies
One of the many wonderful aspects of these cranberry hand pies is their versatility when it comes to serving and storage. They are equally delicious warm from the oven, at room temperature, or even chilled. Whether you’re making them ahead for a special event or simply storing leftovers, understanding proper storage techniques will help maintain their freshness and flavor. Here’s how to best store your hand pies:
- Storing Baked and Cooled Hand Pies: Once your hand pies have completely cooled to room temperature, they can be stored in an airtight container.
- Refrigerator: They will remain fresh for up to 3 days in the refrigerator. This is ideal for quick grab-and-go treats throughout the week.
- Freezer: For longer storage, you can freeze baked and cooled hand pies for up to 2 months. To do this, arrange them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe bag or container, separating layers with parchment paper to prevent sticking. When you’re ready to enjoy, thaw them overnight in the refrigerator, then bring them to room temperature before eating. You can also warm them gently in the oven or air fryer for a “freshly baked” experience.
- Storing Assembled and Unbaked Hand Pies: If you’re looking to do some meal prepping or get a head start on baking, you can assemble the hand pies ahead of time and store them unbaked.
- Refrigerator: Tightly cover the assembled, unbaked hand pies with plastic wrap or store them in an airtight container. They can be refrigerated for up to 2 days. When ready to bake, place them directly into a preheated oven (they may require a few extra minutes of baking time).
- Freezer: For extended make-ahead convenience, tightly wrap unbaked hand pies individually in plastic wrap, then place them in a freezer-safe bag or container. They can be frozen for up to 2 months. The great news is that these frozen hand pies can go directly into the oven or air fryer without needing to thaw first! Just be prepared for an additional 10-15 minutes of cooking time. It’s highly recommended to freeze them without the glaze, as the glaze is best applied after baking and cooling for the freshest appearance and texture.
With these storage methods, you can enjoy the delightful taste of cranberry hand pies whenever the craving strikes, making them a fantastic addition to your dessert repertoire.

These Cranberry Hand Pies are easy, crazy delicious, and the perfect individual serving size dessert. Plus a fantastic use of any left over holiday cranberry sauce!
Ingredients
- 2 9-inch homemade pie crusts, (or 14 ounce box refrigerated pie crusts)
- 1/2 cup cranberry sauce, (homemade or store bought)
- 1 large egg + a splash of milk, mixed together for an egg wash
- 1/2 cup powdered sugar
- 1 tablespoon orange juice
- 1/4 teaspoon orange zest
Instructions
-
Preheat oven to 375 degrees F. Line 2 baking sheets with parchment paper.
-
In a small bowl, beat together the egg and milk to create the egg wash.
-
Sprinkle some flour on a large cutting board or clean surface and carefully unroll the pie crusts. Using a 4-inch diameter cookie cutter (or the opening of a tumbler glass), cut the dough into 8 circles. Gather any dough scraps, gently re-roll, and cut into 4 more circles, yielding a total of 12 circles.
-
Drop a heaping tablespoon of the cranberry filling onto the center of 6 of the dough rounds. Brush the edges of these dough rounds with the prepared egg wash. Carefully place the remaining 6 dough rounds on top of the fruit-filled ones. Gently press the edges to adhere the top and bottom dough rounds together, then use a fork to press and securely seal the edges.
-
Transfer the assembled hand pies to the parchment paper-lined baking sheets, ensuring they are about 2 inches apart. Brush the tops of all the pies with the remaining egg wash, and then use a small sharp knife to slice two small crisscross vents in the tops of each pie to allow steam to escape during baking.
-
Bake for about 25-30 minutes, or until the hand pies are beautifully golden brown and the filling is bubbly. Baking time may vary depending on your oven.
-
In the meantime, prepare your glaze. In a small bowl, combine the powdered sugar, fresh orange juice, and orange zest. Whisk until smooth and lump-free. Add more juice or sugar if needed to reach desired consistency.
-
Once the pies are baked, transfer them to a wire rack and allow them to cool completely. Once cooled, brush the glaze generously on top of each pie. Allow the glaze to set and harden before serving.
-
Serve your homemade Cranberry Hand Pies warm or at room temperature, and enjoy!

Notes
Re-roll the dough scraps: Don’t discard excess dough! Gently gather, press, and re-roll the scraps. While working quickly to keep the dough cool, you can often create one or two additional hand pies, maximizing your yield and minimizing waste.
Don’t overfill: It’s crucial to use just a heaping tablespoon of filling per pie. Overfilling is a common mistake that can lead to messy leaks during baking, making the pies stick to the parchment paper and potentially burning the filling. A moderate amount ensures a perfect seal and a clean bake.
Crimp the edges securely: After placing the top crust, use your fingers to gently press the edges together, and then firmly crimp with a fork. This step is vital for creating a strong seal, preventing the delicious cranberry filling from oozing out while baking. A good crimp also adds a lovely rustic texture to your hand pies.
Cut vents in the tops of each pie: Before baking, remember to slice two small crisscross vents on the top of each hand pie. These vents are essential for allowing steam to escape from the hot filling. Without them, trapped steam can cause the pies to become soggy on top, or even burst, leading to a soupy interior rather than a perfectly set one.
