Essential Ingredients for Your Perfect Pickle Roll Ups

Creating these delightful low-carb appetizers or snacks requires surprisingly few ingredients, making them a fantastic choice for busy days or impromptu entertaining. With just three core components, you’re well on your way to a treat that’s both satisfying and simple. (Full detailed measurements can be found in the printable recipe card below).

  • Whipped Cream Cheese: We highly recommend using whipped cream cheese over the traditional brick variety for this recipe. Its airy texture makes it exceptionally easy to spread smoothly across the delicate ham slices without tearing them. Plus, it often comes pre-flavored, saving you an extra step! While chive and onion is a personal favorite, a garlic and herb cream cheese also works wonderfully, adding another layer of savory depth. Remember, allowing your cream cheese to reach room temperature before spreading is crucial for a smooth application and to prevent any damage to your ham slices.
  • Pickles: The star of the show! The beauty here is that you can use any variety of whole pickles you adore – from classic dill and sweet gherkins to bread and butter pickles, whether homemade or store-bought. The key is to ensure they are whole, not pre-cut spears or slices, as this allows for a consistent roll. Additionally, opting for straighter pickles will make the rolling process much easier and yield more uniform results.
  • Ham: Your choice of deli ham offers another avenue for customization. Smoked ham imparts a rich, deep flavor; honey or maple ham adds a touch of sweetness; and peppered ham provides a subtle kick. When purchasing from the deli counter, always request thin slices. Thinner slices are more pliable, making them easier to roll tightly around the pickles without cracking or breaking, ensuring a neat and cohesive roll up.
  • Everything Bagel Seasoning (Optional): For those who appreciate an extra burst of flavor and a delightful textural contrast, a sprinkle of everything bagel seasoning is a fantastic addition. It provides a savory, garlicky, and oniony punch, along with a satisfying crunch, making your dill pickle roll ups even more irresistible.

Dill Pickle Roll Up Variations: Unleash Your Creativity

While the classic Ham Pickle Roll Up is undeniably delicious, its simple framework allows for endless creativity. “Redneck Sushi” is surprisingly versatile, offering a plethora of delicious twists to suit any palate or occasion. Here are some fantastic, easy variations to inspire your next batch:

  • Experiment with Different Deli Meats: Don’t limit yourself to ham! Swap it out for thinly sliced turkey breast for a lighter option, or use roast beef for a richer, more robust flavor profile. Sliced chicken or even pastrami can also make excellent alternatives, each bringing its own unique taste to the party.
  • Amp Up the Cheese Factor: For cheese lovers, a simple addition of shredded cheese can take these roll ups to the next level. Sprinkle a thin layer of your favorite shredded cheese – cheddar, Monterey Jack, or a sharp provolone – over the cream cheese before adding the pickle. This adds extra creaminess, flavor, and a delightful texture.
  • Infuse with Ranch Flavor: If you’re a fan of the tangy, herbaceous notes of ranch, this variation is a must-try. Instead of using pre-flavored cream cheese, start with an 8-ounce brick of softened plain cream cheese. Blend it thoroughly with 2 tablespoons of homemade ranch seasoning or your favorite store-bought mix. This creates a vibrant, zesty spread that perfectly complements the ham and pickle.
  • Transform into Tortilla Rollups: For a slightly heartier, more substantial snack, use small flour tortillas as your base. Spread the cream cheese mixture generously over a tortilla, lay down a slice or two of your chosen deli meat, place the pickle, and roll it up tightly. Cut into pinwheels for a fun presentation. This is a great way to make them more filling, especially for lunchboxes or a quick meal.
  • Spicy Kick: For those who love a bit of heat, finely chopped pickled jalapeños or a dash of hot sauce mixed into the cream cheese can add a delightful fiery dimension.
  • Herbal Freshness: Incorporate fresh herbs like chopped dill, parsley, or chives directly into plain cream cheese for a bright, garden-fresh flavor.

How to Master Ham Pickle Roll Ups: A Simple Guide

Crafting these delectable ham and pickle roll ups is astonishingly quick and straightforward, taking just a few minutes of your time. Follow these simple steps for a perfect batch every time. (For precise details and exact measurements, refer to the comprehensive recipe card below).

  1. Prepare and Dry Ingredients: This crucial first step ensures your roll ups hold together beautifully and remain crisp. Thoroughly pat both the slices of deli ham and the whole pickles completely dry using paper towels. Excess moisture can make the roll ups soggy and difficult to keep tight.
  2. Spread the Cream Cheese on Ham: Lay each slice of ham flat on a clean work surface. Using a small spatula or butter knife, spread approximately 1 ½ tablespoons of your room-temperature whipped cream cheese evenly across each slice. Make sure to extend the cream cheese all the way to the edges; this helps seal the roll and ensures every bite is flavorful.
  3. Add the Pickle and Roll: Carefully trim the very ends from each pickle for a neater appearance. Then, place one dried pickle on top of the cream cheese at one end of a ham slice. Begin to roll the ham slice very tightly around the pickle, starting from the end with the pickle. The tighter you roll, the more secure and aesthetically pleasing your roll ups will be.
  4. Slice and Garnish: Once all your ham and pickle rolls are assembled, use a sharp knife to cut each one into uniform ¾-inch pieces. This size is ideal for bite-sized snacking. If you wish, arrange them on a serving plate or platter and sprinkle generously with everything bagel seasoning for an added layer of flavor and texture.
  5. Chill or Serve Immediately: These roll ups are delicious served straight away, but they also benefit from a short chill. If preparing ahead, cover the plate of dill pickle roll ups tightly with plastic wrap and refrigerate until you’re ready to serve. Chilling helps them firm up and allows the flavors to meld beautifully.

Pro Tips for Flawless Ham Pickle Roll Ups

While this appetizer recipe is undeniably easy, a few expert tips can elevate your ham pickle roll ups from good to absolutely perfect. Pay attention to these details for the best possible results:

  • Eliminate Excess Moisture: Do not underestimate the importance of thoroughly drying both your ham and pickles with paper towels. Any residual moisture will prevent the roll ups from staying tightly bound and will quickly lead to a soggy, unappealing texture. A dry surface is key for a firm, clean roll.
  • Ensure Cream Cheese is at Room Temperature: Cold cream cheese is stiff and difficult to spread, which can easily tear delicate deli ham slices. Allowing it to soften at room temperature for about 30 minutes before use will ensure a smooth, even application, making the assembly process much easier and cleaner.
  • Utilize Toothpicks for Security: If you find that your roll ups aren’t staying as tightly rolled as you’d like, especially if your ham slices are particularly thin or if you’re using larger pickles, don’t hesitate to use toothpicks. Insert a toothpick through each piece to secure it, making them easier to handle and preventing them from unraveling, particularly when serving at a party.
  • Mind Your Slicing Technique: When cutting the assembled rolls, use a very sharp knife and a gentle, sawing motion rather than pressing straight down. This helps create clean cuts and prevents squishing the roll ups, maintaining their attractive appearance.
  • Expect Varied Yields: The number of pieces you get can vary based on the size of your ham slices and pickles, as well as the thickness of your cuts. The measurements provided are a general guide, so don’t worry if your final count differs slightly; the goal is deliciousness, not an exact count.

Serving Suggestions and Perfect Pairings

These versatile dill pickle roll-ups shine as a delightful low-carb appetizer, but their appeal extends far beyond just party snacks. Their savory and refreshing profile makes them suitable for a variety of occasions and pairings.

For a fantastic party spread, create an array of complementary low-carb recipes. Imagine these ham pickle roll ups alongside crispy Mozzarella Pizza Chips, crunchy Dill Pickle Cheddar Chips, and the ever-popular Bacon-Wrapped Jalapeño Poppers. A creamy Salmon Dip is also a family favorite that pairs wonderfully, adding a touch of elegance to your spread.

Beyond appetizers, consider serving these as a unique and refreshing side dish. They’re excellent alongside classic American fare like burgers and hot dogs, offering a cool, tangy contrast to grilled meats. You could also pack them into lunchboxes for a satisfying and healthy midday meal, or simply enjoy them as a light afternoon snack to tide you over until dinner. Their portability and ease make them ideal for picnics, potlucks, and game day gatherings.

Make Ahead and Storing Leftovers for Freshness

  • Making in Advance: Ham pickle roll ups are an excellent make-ahead option for entertaining. They can be prepared several hours before serving, which takes the pressure off last-minute prep. Store them in an airtight container in the refrigerator to maintain their freshness. For optimal texture and to prevent the pickle juices from potentially making the ham soggy, we recommend assembling the rolls but waiting to slice them into individual pieces closer to serving time if they’ll be sitting for more than an hour or so. This ensures each bite is as fresh and firm as possible.
  • Storing Leftovers: Any leftover roll ups should be promptly covered with plastic wrap or transferred to an airtight container and refrigerated. While they remain delicious the next day, it’s best to consume them within a day of preparation. Over time, the pickle juice can begin to leak out, which might make them a bit messy and diminish their crispness. Enjoy them quickly for the best experience!

Ham Pickle Roll Ups are an easy and super delicious 3-ingredient snack or appetizer. Also referred to as Redneck Sushi, they’re low carb so you can snack away without any guilt!

Ingredients

  • 12 ounces whipped chive and onion cream cheese (or garlic and herb), room temperature
  • 16 whole dill pickles
  • 16 thin slices deli ham
  • Everything bagel seasoning, for garnish and flavor (optional)

Instructions

  1. Using paper towels, pat all the ham slices and pickles completely dry.
  2. Set ham out on a clean work surface in a single layer. Spread the cream cheese evenly over the slices of ham (about 1 ½ tablespoons each), making sure to cover them completely all the way to the edges.
  3. Trim the ends off the pickles and set one on top of the cream cheese.
  4. Very tightly roll each pickle up in the ham (use toothpicks to secure them, if needed.)
  5. Cut the ham rolls into ¾-inch pieces. Sprinkle with everything bagel seasoning, if desired.
  6. Place the pieces on a plate or platter, serve and enjoy!

Notes

  • Use different deli meat. Try turkey or roast beef instead of the ham.
  • Add more cheese. Sprinkle some shredded cheese on top of the cream cheese.
  • Add some ranch flavor. Instead of the flavored cream cheese, use an 8 ounce brick of softened cream cheese and blend it with 2 tablespoons ranch seasoning.
  • Turn them into tortilla rollups. Use small flour tortillas as the base to wrap up the meat, cream cheese, and pickles.
  • You may end up with a different number of slices. Measurements are a guide depending on the size of your ham slices and pickles, and how thick you cut the pieces. You can get more or less than I got.
