  • 1 large sweet onion, , thinly sliced
  • 1 1/2 tablespoons chopped fresh thyme
  • 1 cup Trader Joe’s Harvest Blend
  • 2 cups vegetable broth, (or chicken broth)

  • Preheat your oven to 400 degrees F (200 degrees C). Carefully cut both acorn squash in half along their ribs, lengthwise. Using a spoon, scoop out the seeds and any stringy pulp from the center; discard them.
