Perfect Roasted Cabbage Steaks with Crispy Bacon: An Irresistible Side Dish
There’s a special kind of magic that happens when vegetables meet high heat in the oven. They caramelize, their natural sugars deepen, and they transform into something truly extraordinary. While many vegetables shine under the broiler, few undergo such a remarkable metamorphosis as cabbage. Forget the bland, boiled versions you might remember; roasted cabbage is a game-changer. It’s tender on the inside, beautifully charred and crisp on the edges, bursting with a sweet, savory flavor that’s utterly addictive. When paired with the irresistible crunch and salty notes of crispy bacon, it becomes an instant classic.
My journey to perfecting this roasted cabbage recipe was inspired by an incredible experience, including a recent Safeway tour where we had the privilege of visiting Cobram Estate – one of the world’s most acclaimed olive oil companies. Walking through their olive groves and learning about the meticulous process behind their award-winning extra-virgin olive oils underscored the importance of quality ingredients. This firsthand experience truly highlighted how premium ingredients, like a robust olive oil, can elevate simple dishes to gourmet levels. Our day concluded with a delightful luncheon, a testament to the versatility and quality of products from Cobram Estate, Boar’s Head, and Dasani, whose excellence I aimed to reflect in this recipe.
You’ve likely enjoyed cabbage in various forms – perhaps boiled in stews, sautéed as a quick side, or shredded in coleslaw. But if you haven’t experienced the sheer delight of roasted cabbage, you’re in for a treat. Roasting unlocks a depth of flavor that other methods simply can’t achieve, making it not just a side, but a star on your plate.
Why Roasted Cabbage Deserves a Spot on Your Table
The Transformative Power of Roasting
Roasting cabbage at a high temperature does something incredible to its texture and flavor profile. The dry heat causes the outer layers to crisp up and develop beautiful brown edges, while the interior becomes wonderfully tender, almost buttery. The natural sugars within the cabbage caramelize, bringing out a subtle sweetness that balances its inherent earthiness. This process is vastly different from boiling or steaming, which can often leave cabbage watery and lacking in character. Sautéing is good for a quick cook, but it doesn’t achieve the same depth of flavor or varied texture that oven roasting provides. Think of it as developing “cabbage steaks” – substantial, flavorful slices that stand up to any main course.
A Nutritional Powerhouse
Beyond its delicious taste, roasted cabbage is a nutritional champion. Cabbage is an excellent source of Vitamin C and Vitamin K, and a good source of fiber, Vitamin B6, and folate. It’s also packed with antioxidants and anti-inflammatory compounds. Incorporating more roasted vegetables like cabbage into your diet is a simple and tasty way to boost your overall health, making this dish not just a culinary pleasure but a smart dietary choice.
Crafting Your Perfect Roasted Cabbage Steaks
This recipe for roasted cabbage is incredibly straightforward, requiring just a few key ingredients to achieve maximum flavor. The simplicity truly allows the quality of each component to shine. You’ll need a fresh head of green cabbage, a good quality extra-virgin olive oil, shallots, garlic, salt, pepper, and, of course, crispy bacon for that irresistible savory topping.

Essential Tips for Flawless Roasting
- Choosing Your Cabbage: Select a firm, compact head of green cabbage with vibrant green outer leaves. Avoid any heads that feel soft or have discolored spots. A fresh cabbage is key to a crisp-tender roasted texture.
- Slice into Thick Wedges (Cabbage Steaks): The magic of “cabbage steaks” lies in their thickness. Instead of finely chopping the cabbage, which can lead to it becoming too soft and mushy, slice the entire head into 1-inch thick wedges. This allows each slice to maintain its structure while roasting, giving you a beautiful presentation and a satisfying bite. Keeping the core intact helps hold the wedges together during cooking.
- Uniform Thickness for Even Cooking: Consistency is crucial for even roasting. Aim for wedges of roughly the same 1-inch thickness. This ensures that all your cabbage steaks cook at the same rate, preventing some from being undercooked while others are overcooked.
- High Heat is Best: For that coveted caramelization and crisp exterior, a high oven temperature is essential. Roasting at 425 degrees F (218 degrees C) provides the intense heat needed to brown the cabbage quickly without drying it out. Don’t be tempted to use a lower temperature, as you might end up with steamed, rather than roasted, cabbage.
- Basting for Flavor: Brushing both sides of each cabbage steak generously with extra-virgin olive oil is vital. The olive oil not only helps conduct heat for better browning but also infuses the cabbage with its rich, fruity notes. Along with the shallots, garlic, salt, and pepper, it creates a flavorful crust.
- Flip Halfway Through: To ensure uniform roasting and beautiful browning on both sides, gently flip the cabbage steaks halfway through the cooking process. This exposure to direct heat on both sides contributes to that irresistible slightly charred, tender texture.
- Don’t Overcook: This is perhaps the most important tip. Roast the cabbage until it’s tender, with nicely browned and slightly crisp edges, but still holds its shape. You want it to be “al dente” – firm to the bite, not mushy or falling apart. Overcooked cabbage can become unpleasantly soft and lose its vibrant flavor. Keep an eye on it during the last few minutes to achieve perfection.
- Crispy Bacon Perfection: The crumbled crispy bacon adds a salty, smoky counterpoint that elevates this dish significantly. Whether you cook it in the oven alongside the cabbage (a great time-saver!) or in a skillet, ensure it’s cooked until beautifully crisp before crumbling and sprinkling over the finished dish.
Delightful Variations to Explore
While I adore the simplicity of the classic roasted cabbage with bacon, its versatility means there are countless ways to customize this dish to your preference. Roasting vegetables truly brings out their best flavor, and with the added salty bacon, these cabbage steaks really don’t need much else, but if you’re feeling adventurous, consider these delicious additions:
- Aromatic Herbs: Elevate the flavor profile by sprinkling additional dried or fresh herbs onto your cabbage steaks before roasting. Thyme, oregano, or rosemary pair beautifully with the earthiness of cabbage and the savory notes of bacon.
- A Hint of Heat: For those who enjoy a little kick, a dash of cayenne pepper, red pepper flakes, or even a drizzle of sriracha before or after roasting can add a wonderful warmth.
- Cheesy Goodness: A generous helping of freshly grated Parmesan cheese sprinkled over the cabbage during the last 5-10 minutes of roasting will melt into a golden, savory crust. Other hard cheeses like Pecorino Romano would also work wonderfully.
- Mediterranean Flair: For a burst of briny, salty flavor, top your roasted cabbage with a dollop of olive tapenade or a sprinkle of chopped capers after it comes out of the oven.
- Sweet & Tangy Twist: A drizzle of balsamic glaze or apple cider vinegar immediately after roasting can add a lovely sweet and tangy dimension, cutting through the richness of the bacon.

Still know some people who claim not to like cabbage? Challenge them with this recipe! Roast some up with good quality extra-virgin olive oil and plenty of crispy cooked bacon – you just might convert them into cabbage lovers for life!

Roasted Cabbage is basted with olive oil, shallot, and garlic, then topped with crumbled crispy bacon. This is such an easy, healthy, delicious side dish to go with any meal!
Ingredients
- 2 1/2 tablespoons extra-virgin olive oil, divided
- 1 head green cabbage (about 1 3/4 pounds)
- 1 shallot, roughly diced
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 6 slices bacon
Instructions
- Preheat oven to 425 degrees F. Lightly coat a 15×10-inch roasting pan with 1/2 tablespoon of the olive oil.
- Slice the cabbage into 1-inch thick steaks, lengthwise, keeping the core intact.
- Brush both sides of each cabbage steak with the remaining olive oil. Sprinkle the shallot, garlic, salt, and pepper over each one. Arrange cabbage steaks on the roasting pan (overlapping slightly is fine, if necessary.)
- Transfer to the oven and roast for 20 minutes. Gently turn each steak over and roast for an additional 15 minutes, until the cabbage is tender and a little charred around the edges.
- In the meantime, cook your bacon! You can either:
1. Cook it in the oven with the cabbage – line a rimmed baking sheet with foil coated with cooking spray. Lay the strips of bacon on the baking sheet, without overlapping. Transfer to oven and cook for 20-25 minutes until crispy. Drain on a paper towel-lined plate. Once cooled, crumble into pieces.
2. Cook it in a fry pan – diced up the bacon. In a medium nonstick skillet, cook bacon over medium-high heat until browned and crispy, about 5-6 minutes. With a slotted spoon, transfer to a paper-towel lined plate to drain.
- Sprinkle the crispy bacon over the roasted cabbage and serve immediately.
Notes
Some variations:
- Sprinkle additional seasonings on your cabbage steaks like thyme or oregano.
- Use a dash of cayenne pepper for a little kick.
- Add a generous helping of freshly grated Parmesan.
- Top with a dollop of olive tapenade.
