Key Ingredients for the Perfect Asparagus Quiche
Creating a truly memorable quiche starts with quality ingredients. Here’s a closer look at what you’ll need and some tips for each:
- Fresh Asparagus: The star of the show! Look for vibrant green spears with tightly closed tips. To prepare, simply snap off the tough, woody ends – they’ll naturally break where they should. Roasting the asparagus beforehand ensures it’s perfectly tender and flavorful, preventing a soggy quiche.
- Olive Oil: Used for roasting the asparagus, it adds a lovely richness and helps achieve that tender-crisp texture.
- Salt and Pepper: Essential seasonings to enhance the natural flavors of all components.
- Finely Diced Ham: Adds a wonderful salty, savory punch. You can use leftover holiday ham, deli ham cut into small cubes, or even pre-packaged diced ham for convenience. (See notes below for vegetarian options or alternatives like bacon!)
- Unbaked Pie Crust: A good crust is key for any quiche. Whether you opt for a homemade flaky pie crust or a store-bought refrigerated rolled crust, ensure it’s unbaked. Brushing the crust with egg white before filling helps prevent a soggy bottom.
- Shredded Swiss Cheese: Known for its nutty, slightly sweet flavor and excellent melting properties. It pairs beautifully with ham and asparagus. Provolone is a fantastic alternative if you prefer.
- Freshly Grated Parmesan Cheese: A sprinkle of Parmesan adds a sharp, salty depth that complements the Swiss and rounds out the cheese blend.
- Large Eggs: The foundation of our creamy custard. Using large eggs provides the right consistency and richness.
- Half-and-Half: This dairy blend (equal parts whole milk and heavy cream) creates a wonderfully rich and creamy custard without being overly heavy. If you can’t find it, simply mix equal parts whole milk and heavy cream.
- Garlic Powder: A subtle hint of garlic enhances the savory elements without overpowering the delicate asparagus.
Asparagus Quiche Recipe
Cook: 40 mins
Total: 55 mins
Servings: 8 people
With fresh asparagus, diced ham, and Swiss cheese, this Asparagus Quiche recipe is savory and cheesy, with a delicious creamy egg base. It’s an easy spring breakfast, brunch, or dinner.
Ingredients
- ½ lb. fresh asparagus, rough woody ends snapped off
- 1½ tbsp olive oil
- salt and pepper, to taste
- ¾ cup finely diced ham, (see note)
- 1 homemade unbaked pie crust, (or store bought refrigerated rolled unbaked pie crust)
- 1 egg white, lightly beaten
- 2 cups shredded Swiss cheese, Provolone also works
- ¼ cup freshly grated Parmesan cheese
- 4 large eggs
- 1½ cups half-and-half
- ¼ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 425°F. Lightly coat a large rimmed baking sheet with nonstick cooking spray.
- Toss the asparagus with the olive oil and a sprinkle of salt and pepper; arrange on the baking sheet in a single layer. Bake until just tender, about 12 minutes depending on their thickness. (For very thin asparagus, start checking at 8 minutes.) Once cool enough to handle, cut each spear into 1-inch pieces.
- Reduce oven temperature to 400°F.
- Transfer the pie crust to a 9-inch pie plate, trim and flute the edges. Brush with the beaten egg white.
- Sprinkle the diced ham and roasted asparagus onto the pie shell. Top with the Swiss cheese and Parmesan.
- In a mixing bowl, beat together the eggs, half-and-half, garlic powder, salt, and pepper until well combined. Pour egg mixture on top of cheeses.
- Bake uncovered in the preheated oven until filling is set and a knife inserted in the center comes out clean, about 40 minutes. (Check after 30 minutes and cover the crust with a crust protector or foil if overbrowning.)
- Let cool to room temperature before slicing.
Notes
- Omit the ham: If you’d like to make a vegetarian quiche, simply omit the cubed ham from the recipe. Alternatively, you could use cooked, crumbled bacon instead of ham.
- Half and half: This is located with the other dairy products in most grocery stores. If you can’t find it, it’s simply equal parts whole milk and heavy cream.
- Let the quiche come to room temperature before slicing. This crucial step gives the cheese and cream time to thicken and fully set, preventing the quiche from spilling out when cut.

How to Make Asparagus Quiche: A Step-by-Step Guide
Let’s walk through each step to ensure your asparagus quiche turns out perfectly golden, creamy, and delicious.
1. Prepare the Asparagus and Preheat Your Oven
Begin by preheating your oven to a robust 425°F (220°C). This initial high temperature is perfect for roasting the asparagus. As the oven heats, grab a large, rimmed baking sheet and give it a light coating of nonstick cooking spray. This will prevent the asparagus from sticking and ensure even cooking.

Next, prepare your ½ lb. of fresh asparagus. Snap off the rough, woody ends – they’ll naturally break at the tender point. Toss the trimmed asparagus spears with 1½ tbsp of olive oil and a generous sprinkle of salt and pepper. Arrange them in a single layer on your prepared baking sheet. Roast them in the preheated oven until they are just tender, which typically takes about 12 minutes. If your asparagus spears are particularly thin, start checking them at 8 minutes to prevent overcooking. Once they’re cool enough to handle, cut each spear into convenient 1-inch pieces. This ensures they distribute well throughout the quiche and are easy to eat.
2. Prepare the Pie Crust
After roasting the asparagus, reduce your oven temperature to 400°F (200°C). Now it’s time to get your pie crust ready. Carefully transfer your unbaked pie crust (whether homemade or store-bought) into a 9-inch pie plate. Trim any excess dough and then flute the edges beautifully – this not only looks lovely but also helps contain the filling. A pro tip for preventing a soggy bottom crust: lightly brush the inside of the pie crust with one lightly beaten egg white. This creates a barrier that helps keep the crust crisp.

3. Layer the Fillings
With your pie crust prepped, it’s time to add the delicious layers! Evenly sprinkle the ¾ cup of finely diced ham over the bottom of the pie shell. Follow this with your roasted and cut asparagus pieces. Next, generously top these layers with 2 cups of shredded Swiss cheese and ¼ cup of freshly grated Parmesan cheese. Distributing these ingredients evenly will ensure every slice of quiche is packed with flavor.

4. Prepare and Pour the Egg Custard
In a separate mixing bowl, combine your 4 large eggs, 1½ cups of half-and-half, ¼ tsp of garlic powder, ¼ tsp of salt, and ¼ tsp of pepper. Whisk these ingredients together until they are thoroughly combined and smooth. This creates the rich, creamy custard that will bind all your fillings together. Carefully pour this egg mixture directly over the cheeses and other fillings in your pie crust. Make sure the liquid is evenly distributed.

5. Bake to Perfection
Place your filled quiche into the preheated 400°F (200°C) oven. Bake it uncovered until the filling is fully set. You’ll know it’s done when a knife inserted into the center comes out clean – this usually takes about 40 minutes. Keep an eye on the crust; if it starts to brown too quickly after about 30 minutes, loosely cover the edges with a crust protector or aluminum foil to prevent overbrowning while the center continues to cook.
6. Cool and Slice
Once baked, remove the quiche from the oven. This next step is crucial for the perfect quiche: resist the urge to slice it immediately! Allow the quiche to cool to room temperature before cutting into it. This cooling time allows the creamy egg custard and melted cheese to fully set, ensuring that your slices are clean, firm, and hold their shape beautifully without any spillage. Patience is key for picture-perfect portions!

How To Store & Reheat Your Asparagus Quiche
One of the many advantages of quiche is its make-ahead potential and excellent storability. Here’s how to keep your quiche fresh and delicious:
Refrigeration:
If you have leftover quiche, allow it to cool completely to room temperature. Then, cover it tightly with plastic wrap or aluminum foil, or store slices in an airtight container. It will keep beautifully in the refrigerator for up to 4 days, making it perfect for grab-and-go breakfasts or lunches throughout the week.
Freezing:
Quiche freezes exceptionally well! To freeze, ensure the quiche has completely cooled. Wrap individual slices or the entire quiche tightly first in plastic wrap, and then again in aluminum foil. Transfer the well-wrapped quiche to a freezer-safe bag or container. It can be frozen for up to 3 months. When you’re ready to enjoy it, thaw the quiche overnight in the refrigerator.
Reheating:
- Oven: For best results, especially to maintain a crisp crust, reheat quiche in the oven. Place thawed quiche (or cold, if reheating from the fridge) on a baking sheet and warm at 300°F (150°C) for 15-20 minutes, or until heated through.
- Microwave: While convenient, reheating in the microwave will result in a softer crust. Heat individual slices on a microwave-safe plate for 1-2 minutes, or until warm.
